If my memory serves, Uya (#02-15 Wheelock Place, 501 Orchard Road, tel : +65 9359 0423) emerged early as part of the wave of unagi restaurants trended by Unagi Tei. Or also formerly known as Man Man. They've been around for a few years now and I've never stepped in until now.
There're a few countries of origin mentioned for their eels. Namely China, Japan and Taiwan. I don't know what was it I had gotten and I definitely couldn't tell the difference. Skin's well caramelized but a little chewy here. Not bad tasting as a whole but I think I like the ones from Unagi Tei better. Even after they've stopped sourcing their eels from Japan.
Tried their eel livers ponzu-ed, yaki-ed and karaage-d. Much prefer the deep fried and grilled ones over the one with ponzu which appears to be boiled.
