Long introduction short, this sake lounge (#01-04 Singapore Marriott Tang Plaza Hotel, 320 Orchard Road, tel : +65 6235 5514) is a collaboration between Ginza Sushi Ichi and the sake producer Suigei Shuzo from the Kouchi prefecture located at the ground floor of Marriott. There is a limited menu which comes directly from Ginza Sushi Ichi just next door. Apparently, some of their sets like the chirashi are limited to 5 servings per day only during lunch.
To provide a little more superficial perspective about the food, Ginza Sushi Ichi in Ginza is Michelin-starred. There are only two other branches, the third one is in Bangkok.
Their chirashi set comes with oshinko - pickled radish. That came with pickled gobo which was thoughtfully studded with some toasted goma for aroma.
What the menu describes as a small dish with the set is their hairy crab croquette. I'm guessing that these are horsehair crab which are also known as kegani. The creamy croquette was filled with minced meat from the crab and some bits of prawn. Good stuff.
This was actually a barachirashi in spite of name. There was a lot of white fish along with maguro, tamago, a small pile of sakura ebi, bits of unagi, scattered ikura, a few blobs of uni and a prawn. The quality of the bowl including the portions were pretty good. The only thing that kept me from enjoying this to the fullest was the bloody bits of ginger that was scattered onto the rice.
Note to self. Ask for no ginger the next time.
Dessert was a pumpkin pudding. One could taste that there was a lot of pumpkin in the pudding from the flavour and texture.
