Getting cheese mille feuille katsu from Tonkatsu by Ma Maison

Tonkatsu by Ma Maison
Tonkatsu by Ma Maison

I had this impression that I've had the cheese mille feuille katsu from Tonkatsu by Ma Maison before. Since it's not in this blog, so it must not have happened before. 😂

Tonkatsu by Ma Maison, tea

Today's roasted barley tea was nice. Thick.

Tonkatsu by Ma Maison, cheese mille feuille katsu

Exactly like how I imagined it would be with mozzarella cheese in the rolled up layers of thin sliced pork.

Tonkatsu by Ma Maison, cheese mille feuille katsu

Nice cheese stretch which left behind a "cheese intestine".

Tonkatsu by Ma Maison

Today's rice also looked better than the previous occasion. More multigrain-y.

Tonkatsu by Ma Maison, cheese mille feuille katsu

It's a different from the rendition at Tonkichi because of the cheese even though both were mille feuille katsu. Pretty happy with it.

Tonkatsu by Ma Maison, tonjiru

Here's another way with the rice and the tonjiru. Am gonna stick with this for a bit.

Tsui Wah (翠華), Clarke Quay Central

Tsui Wah (翠華), Clarke Quay Central

It's been maybe a couple of years since we last ate at Tsui Wah. They're currently located at Clarke Quay Central (#01-08, 6 Eu Tong Sen Street, tel : +65 6978 9274). The old place at Clarke Quay is no longer around. We came by for......stuff.

Tsui Wah (翠華), condensed milk buns

Their condensed milk toast are still awesome. Look at the milky glaze over the yellow of butteriness in those buns.

Tsui Wah (翠華), black sesame tang yuan in almond milk

There's tang yuan in almond milk which is something under their Mother's Day Special.

Tsui Wah (翠華), black sesame tang yuan in almond milk

Those glutinous rice balls were tender and chewy. Nice black sesame paste inside.

A few days later......
Fate bequeathed us this lunch.
Tsui Wah (翠華), horlicks

Haven't had Holicks for...a long time and since we saw it on the menu, why not? If you've had it, you'd understand the gently sweet milky maltiness that comes with it. They didn't stinge on the powder and no additional sweetening was added. 👍🏻

Tsui Wah (翠華), sweet sour prawn pineapple hawthorn

Sweet and sour prawns were as delicious as the previous time we had them.

Tsui Wah (翠華), fish maw red date chicken soup

Ordered the fish maw red date wellness chicken soup which was also part of the Mother's Day Special.

Tsui Wah (翠華), fish maw red date chicken soup

Soup was delicious. Loved how it was both savoury in a chicken-y and seafood-y manner and also sufficiently salted. Chicken was fall off the bone tender. Fish maw was entry level quality - expectedly so because they didn't charge a premium for the soup. Would have been great if there were more goji berries and red dates for that layer of fruity sweetness but I'm not complaining. 😬

Tsui Wah (翠華), baked fried rice pork chop tomato puree

I'm generally not a baked rice person and will be skeptical of them. The one instance I recall agreeing with was the one from So Good. This will be the second. It's actually a baked fried rice with pork chop and tomato puree. Pleasantly surprised by how tender the pork chop was in contrast to the imagery in my head of something leathery and stringy. Like the sweet mellowed tomato sauce and their discreet application of mozzarella cheese.

Wiped the casserole dish clean.

Tsui Wah (翠華), egg tarts

This might be my first egg tarts from Tsui Wah. Crust was the pastry kind and tasted quite similar to those from Tong Heng. Egg custard wasn't excessively sweet.

Tsui Wah (翠華), almond milk egg white

We've always enjoyed the almond milk/cream with egg white at Tsui Wah - from Hong Kong to Singapore. 😅

Yan Seng (炎成), Tekka Food Centre

Yan Seng (炎成), Tekka Food Centre

We noticed Yan Seng (#01-319 Tekka Market & Food Centre, 665 Buffalo Road) in our previous trips to Tekka Market. What drew our attention were the noodles on display that looked like Hokkien mee. The operative word here is 'looked'. It tasted like a peppery 经济米粉/面. Definitely nothing like Hokkien mee. Chilli has a much higher ratio of heat to sweetness and I like it. We also got freshly fried fish cakes since it was the start of the day and those were good.

A couple of weeks later......
Yan Seng (炎成), Tekka Food Centre

Came back to try their tung hoon/glass noodles/冬粉. What you couldn't visually tell was that the noodles were tangy. Maybe lemongrass. Reminded me of tom yam or mee siam. Otah's run of the mill.

Holy Grill, Old Airport Road Food Centre

Holy Grill, grilled fish

Have noticed Holy Grill (#01-27 Old Airport Road Food Centre, 51 Old Airport Road) for years but never tried their food until today. This was their grilled dory - a fish I wouldn't have picked usually because of the mushy texture and muddy flavour. It was the only fish that was available and in retrospect I kinda regretted not getting the chicken instead. Portions were pretty substantial and I liked the crust that they caramelized on the fish - but not the fish. Coleslaw was creamy with lots of mayo and baked potato was dry-ish.

Fort Canning Big Prawn Noodle (皇家山大虾面), Food Republic @ Wisma Atria

Fort Canning Big Prawn Noodle (皇家山大虾面), Food Republic @ Wisma Atria

This bowl from Fort Canning Big Prawn Noodle (Food Republic, Wisma Atria Level 4, 435 Orchard Road) was much better tasting than the appearances belied. I was surprised by the heat from the broth which reminded me of the Penang styled bowl from East Treasure Speciality Prawn Noodle

Noticed that there was a herbal flavour infused into the sliced pork belly (tenderer than I imagined) and pig's skin in the bowl. I'm guessing that those were braised separately in herbal stock. Those large ang kar prawns were edible - they were pre cooked and one should not expect the same standards as the freshly cooked like those from that Zion Road Riverside stall. Tobiko prawn balls were more memorable than the prawns.

Wildfire Burgers, Robertson Walk

Wildfire Burgers, Robertson Walk

We didn't have a good experience with Wildfire Burgers previously. The short of it was that I had never thought well of their burgers for a shop that mostly did burgers. I also remember saying that I wouldn't come back. For some reasons, we did. Good thing we did because this third time's a charm. This was the Robertson Quay shop (#01-12 Robertson Walk, 11 Unity Street) which we've never been to before.

Wildfire Burgers, telok ayer papa pineapple pale ale

Menu appears to have changed. The hoppy Telok Ayer Papa Pineapple pale ale's pretty good drinking. Flavour had citrus which made it refreshing. Yes, there was pineapple flavour minus the sweetness.

Wildfire Burgers, salt & vinegar onion rings

Those thin pale onion rings were nicer munching than I imagined. Thin and somewhat crispy.

Wildfire Burgers, wedge salad

We decided that we wanted a wedge salad because blue cheese sauce. Not bad.

Wildfire Burgers, classic 101 burger

Their Classic 101 cheeseburger's not bad. It's Stone Axe wagyu but look beyond that.

Wildfire Burgers, classic 101 burger

Meat's coarse mince, beefy and moist in medium-ish doneness. This result was a good texture with a bite while maintaining tenderness. Nice melted American cheese along with a faint register of pickles and onions, all between soft butter brioche buns. I can do with out the Chipotle mayo the next time.

Wildfire Burgers, uni ebi burger

Tried their seasonal uni ebi burger. Panko-ed ebi patty with a rich squid ink aioli topped with uni. It's served with minimal theatrics.

Wildfire Burgers, uni ebi burger

The theatrics came after. Uni from a box was brought to the table and subsequently laid over. We were told that some people prefer to have it prepared in the kitchen but we didn't mind watching them scoop them onto the burger.

Wildfire Burgers, uni ebi burger

Poppyseed bun.

It will be apparent for those who have had experiences with uni that not much of the them can be tasted through the burger. They did a great job out of that squid ink aioli which was pretty intensely flavoured on a prawn patty which was also delicious. That sea urchin was more ostentation than thought out burger crafting. It was good eating though.
